in the mean time here is my Welsh Cake recipe to wet your appetite. 8 oz self raising flour, 4oz butter, 1/2 tsp mixed spice, 1 pinch of salt, 3oz currents, 3oz caster sugar 1 egg, milk to make dough Rub together flour, salt and spice to butter to resemble bread crumbs. Add sugar and currrents, mix in. Add beaten egg and a little milk to make a pastry like dough. Lightly knead and roll out on a floured board to 1/4 of an inch. Cut in rounds and gently fry each side until golden brown in a nonstick frying pan, you can use a griddle if you own one. Sprinkle with caster sugar. For variation though not very welsh you can swap the mixed spice for a few drops of vanilla extract added to the egg and chocolate chips instead of currents. My eldest son who doesn't like currents loves these. |
